My husband brought home steaks tonight so I decided to give them a rub down and top them with some chive butter. He really liked the result, so I figured I'd share the recipe here.
Primal Garlic Steak with Chive Butter
- 2 tbsp good quality virgin olive oil
- Four of your favorite kind of grass fed steaks
- 4 tbsp grass fed butter (I use Kerrygold)
- 2 heaping tbsp minced garlic
- 1 tbsp fresh or freeze dried basil
- 2 tbsp of fresh or freeze dried chives
- Kosher Salt (or Sea Salt) to taste
- Freshly ground black pepper to taste
The time is actually dependent on how well you like your steaks cooked. 🙂
In a small bowl, add the minced garlic, Basil and salt and pepper to taste. Mix well.
Rub the mixture onto both sides of your steaks. If you want to let it soak in the flavor a bit, you can cover it and put it in the fridge for an hour. I didn't do this tonight because everyone was in a rush. 😉
Heat the olive oil in a frying pan set on medium. When it's nice and hot, add your steaks and cook to your desired temperature (me and the kids did medium well while my husband had his medium rare.
Right before the steaks are done, you'll want to put the chives in with the butter and mix it well (I use Kerrygold's naturally softened butter… if you're not using something similar, you'll need to soften the butter a bit first).
Plate the steak immediately upon taking it out of the pan and add a spoonful of the butter to the top of it. You'll want the steak to be hot when you put the butter on. If you had to cook your steak in batches (like I had to this evening), then simply toss it in the pan and let it cook for a minute or so on each side to reheat it, plate it and then top with the butter.
A quick and simple meal and the kids had zero complaints. 🙂
