My son asked me to make some cornbread this morning while I was frying up some bacon. So, I decided to see if combining the two (along with a little honey) was a good idea. 😉
Turns out it was.
What you’ll need:
- Cornbread mix
- 1/2 tbsp honey
- 3 strips crispy bacon, crumbled
- Pam baking spray or muffin cup liners (I used the former)
You can make your own cornbread mix or use the standard Jiffy Cornbread mix like I did. You also might need to use more bacon and honey depending on how much cornbread mix you’re making. The above is based off making one box of Jiffy cornbread.
Make the cornbread mix as directed and then add the honey and bacon to the mix.
Fill up the muffin cups (or put the mix into a greased muffin pan) and bake as directed. When the muffins are done, remove them from the muffin pan and place them on a rack to allow them to cool for a few minutes.
Add a pat of butter and enjoy!
A super simple and tasty way to mix it up at breakfast. 🙂
